Relais Duca di Dolle - Rolle di Cison di Valmarino (Treviso, Italy)
The 20 finalists selected will participate in the final at the Relais Duca di Dolle in Rolle di Cison di Valmarino (Treviso, Italy), a former Cistercian monastery restored by the Bisol family, the location selected for the Veneto based 2007 edition of Charme Sommelier.
An event dedicated to the fascination of the world of wine couldn’t have a more appropriate setting: the Relais Duca di Dolle in fact, emerges in Rolle, a historic village immersed in the tranquil hills of the Altamarca Trevigiana.
For the occasion, the swimming pool of the Duca di Dolle will be adorned with a glass catwalk over which all candidates will need to pass in order to serve the wines to the guests and jury who will dine poolside, immersed in a magnificent atmosphere.
The dinner at the final will be prepared by well-known chef Paola Budel who will create her interpretation of Jada’s Venetian Gastronomic Specialty line. Paola Budel boasts an exceptional curriculum vitae; to cite just some of her collaborations: Gualtiero Marchesi, Michel Roux, Heinz Winkler and career highlight, Executive Chef at the Principe di Savoia in Milan.

Cream of Baccalà soup, finferli mushrooms and croquettes of pumpkin and garlic
Cannelloni with veal cheek and local mature Montasio cheese
Honeyed and spiced duck breast, sweet and sour radicchio di Treviso
Chocolate and Pear dessert with Cartizze Bisol

The jury for the final will be presided over by Terenzio Medri, National president of AIS and Gianluca Bisol.Two presidents from the Sommelier Associations of countries participating in the 2009 edition of Charme Sommelier will also be invited to participate in the jury.
At the conclusion of the evening, the jury will declare the winners of the 2008 edition of Charme Sommelier.
